Raw Brownies

I had to share, these are that good.  (It’s usually the answer to the question, “What are you eating?”).  These and more amazing recipes found at Cupcakes and Kale.

My version (below) is slightly different from Jess’s Raw Brownies (which are awesome, it’s just I usually use what I have on hand):

raw brownies
makes 12-16 brownies 

1-1/2 cup dates
1/2 cup walnuts
1/2-1 cup pecans or other nut of your choice
2 tbsp hemp hearts
4 tbsp cocoa powder
1 tsp pure vanilla extract
1-2 tbsp agave ( 1 tbsp honey, 1 tbsp maple syrup)

shredded coconut or cacao nibs to taste

kosher salt

Mix dates, nuts, vanilla, hemp, cocoa and sweetener of choice in a food processor until well-blended (will look like a wet cookie dough). At the last minute, fold in shredded unsweetened coconut or cacao nibs or a dash of cayenne pepper if you like your chocolate with a little Mayan kick.

Take a 8×8 square baking pan and line it with plastic wrap.  Press the brownie mixture in and pat it flat with wet hands to avoid sticking.  Cover with plastic wrap, place in freezer and allow to sit for a few hours.  Remove the whole block, place on cutting board and cut into rows and columns until you have a set of brownie squares.  Place back in the baking dish and keep covered or place in tupperware with wax paper between layers.  Store and serve directly from the freezer.

I like mine with a little pinch of course or kosher salt.  Mmmm, like salted caramel!
